Creamy Zucchini Alphabet Risotto 🥒


Here's a Creamy Zucchini Alphabet Risotto family meal recipe made with our very own Anchovy Anya Meals stock!

Ingredients (2 servings):
1/2 cup of dried Alphabet pasta
1/4 cup of yellow onion (diced)
1 clove of garlic (minced)
1 cup of zucchini (diced)
1 tbsp of unsalted butter (for cooking)
2 tubs of Anchovy Anya Meals stock
1.5 cups of water (boiled)
1/4 cup of fresh milk (full cream)
2 tbsp of Parmesan cheese (grated)
Sprinkle of black pepper to taste (optional)

Method:
Sauté yellow onions, minced garlic and zucchini with unsalted butter in a pan over medium heat till soft.

Add in Anchovy stock, then stir in pasta. Pour in splashes of water, a bit at a time as the pasta absorbs all of the stock goodness. .

Pasta should be al denté once all 1.5 cups of water are incorporated. Pour in milk and continue stirring till all liquid is absorbed. You may always add more water if consistency is too thick for your child's liking. .

Toss in grated parmesan and black pepper (optional), stir a little more and serve at an appropriate temperature for your child! .

* You can purchase Alphabet pasta in your local supermarkets. I have used San Remo's soup pasta bought from Giant supermarket. You may also replace it with pasta stars.
