Japanese Pumpkin Rice ๐ŸŽƒ๐Ÿš


๐Ÿ‘ถ: Basic recipe for babies 7 months and up. Feel free to replace edamame and corn with shredded carrot and broccoli for younger babies.

Nutritional benefits:
Whitebait fish and anchovies are excellent sources of calcium, optimum for building strong bones for our little tots.

Pumpkin is rich in potassium, vitamin C and fiber. It also contains beta-carotene which reduces inflammation.ย 

Equipment:
A rice cooker

Ingredients:
1/2 cup short grain rice*
1/2 cup chopped Japanese pumpkin
1.5 cups water
1 tbsp dried white bait fish (rinsed)
1 tbsp edamame
2 tbsp corn
2 small tubs of Anchovyย Anya Meals Stock

Method:
Wash both rice grains and dried white bait fish separately. Add all ingredients into the rice cooker and begin to steam.

Pumpkin should be entirely soft after steaming. Mix well and serve at an appropriate temperature.


You may choose to roll the rice into onigiri (rice ball) babies for their bento lunch. ๐Ÿ™ Great for baby led weaning; just be sure to wet your hands first before shaping them!

I used Thai Hom Mali rice grains for this recipe. You may substitute it with brown rice or Japanese rice; soak them in water for a minimum of 30 mins prior to cooking. Basmati rice grains will not work for this recipe.
