Parmesan zucchini and corn tomato pasta 🌽🍝


Parmesan zucchini and corn tomato pasta for babies 9 months and above.

1 Zucchini, diced
2 tbsp frozen corn
1/2 yellow onion, chopped
2 cloves of garlic, minced
1 tsp of tomato paste
1.5 cups of cooked pasta
3 tubs of Anchovy Anya Meals Stock
1 tsp of Italian seasoning (or dried oregano)
Black pepper to taste
Parmesan cheese for toppings

1. Sauté onions and garlic in olive oil till fragrant, add in zucchini and continue to sauté for 3 minutes or so.
2. Add frozen corn, Anchovy stock and tomato paste.
3. Once stock has melted and started to simmer, add in herbs and pasta. Stir well to coat.
4. Grate parmesan over (as much as you like, we won't stop you!)
5. Serve at an appropriate temperature.

Added an extra crackle of black pepper and drizzle of extra virgin olive oil for my portion. Shared this with the toddler and she loved it!
