Chicken, Apricot and Carrot Quinoa Stew recipe, for babies 6 months and above.
Ingredients:
1 cup of dry quinoa
2 small carrots or 1 large carrot, diced
3 small tubs of Chicken Essence
3.5 cups of water
4 apricots, diced
200g of minced chicken
Method:
Bring 1 cup of water to a boil in a small pot, add carrots, apricots, minced chicken and Chicken Essence. Stir well and simmer for 30 minutes.
Wash quinoa grains, drain and combine with 2.5 cups of water. Steam in a rice cooker and fluff with fork when done.
Blend chicken, apricot and carrot stew into a pureé and mix well with steamed quinoa.
Serve at an appropriate temperature or freeze in single servings.
Keeps in the freezer for up to 3 months but best consumed within a month.
