Creamy corn chowder 🌽


Here's a cheater's guide to a thick and creamy corn chowder for babies 12 months and above!

We've added oatmeal as a thickener to make it creamy and delicious. Omit oatmeal if you would just like a white corn sauce for your pasta!

Ingredients (serves 2 toddlers):

1 tbsp Extra virgin olive oil or grass fed butter
1 cup of frozen corn
1 cup of full cream milk
1/4 cup of organic instant rolled oats
2 shallots (minced or diced)
3 small tubs of Chicken Anya Meals essence 
A dash of dried thyme
A dash of nutmeg powder

Method:

1. Heat olive oil or unsalted butter over medium heat, sauté shallots till fragrant.
2. Add in frozen corn and continue frying.
3. Add in a dash of dried thyme and nutmeg powder.
4. Pour in 1 cup of full cream milk and add in Chicken essence. Allow it to come to a boil, then reduce heat to low and let it simmer till corn is completely soft. 
5. Add in organic instant oats in the last 5 minutes and allow it to thicken.
6. Optional: Blend with a handheld blender to your baby's desired consistency and you're done!

As always, remember to cool hot food and serve at an appropriate temperature to avoid scalding.
