Fish vermicelli soup 🐟🍜


 

Here's a Fish vermicelli soup recipe for our little ones 8 months onwards. It's great with toddlers as well! ☺️

Ingredients (2 servings):
1 rice bowl of cooked rice vermicelli
1 tbsp sesame oil
1 cod/threadfin fillet (sliced and marinated with sesame oil, white pepper and ginger slices)
4 tubs Anya Meals stock (Chicken or Anchovy)
1 knob of ginger (thinly shredded)
1/2 tsp garlic (minced)
3 cherry tomatoes (halved)
Handful of vegetables (chopped)
6 wolfberries (washed and soaked)
1/2 cup of water
A dash of white pepper to taste (optional)

Method:
In a pot, sauté ginger shreds over medium heat till aromatic, then add garlic. Continue to sauté for half a minute more, then add water, stock tubs and bring to a boil.

Once boiling, add vegetables and cook till fork tender. Add in fish slices and wolfberries then simmer till fish slices are opaque. 

Pour soup over rice vermicelli noodles and serve with a dash of white pepper to taste!
