Takikomi gohan, or Japanese mixed rice (炊き込みご飯), is just one of our favourite delicious recipes for lazy days. It is a Japanese rice dish where short grain rice are cooked with vegetables, mushrooms, seafood or meat. I usually toss in whatever is available in my fridge or freezer; very little prep yet wholesome and delicious! The ingredients in this recipe are suitable for babies 12 months onward, but you will need to add more water for a softer consistency.
Ingredients (serves 2 adults):
1 cup organic brown/Japanese rice
1 handful of frozen sweet potato, cubed
1 handful of frozen pumpkin, cubed
2 tbsp of frozen peas
1 large tub of Anya Meals broth or stock (Anchovy, Chicken or Vegan broth)
1 packet of Bunashimeiji mushrooms
2 tbsp of unsalted butter
Optional: 1 tbsp of liquid aminos or light soy sauce
Pepper to taste
Method:
1. Wash and soak rice for 30 minutes. Drain, then add 3 cups of water.
2. Add frozen vegetables, Anya Meals stock, and liquid aminos or light soy sauce (optional).
3. Top with clean Bunashimeiji mushrooms, unsalted butter and season with pepper.
4. Let the rice cooker work its magic, and do not open lid after rice is done. It will need another 10-15 minutes of further steaming for the rice to be fluffy.
Feel free to add in slices of protein (seafood/meat). They have to be in tiny chunks or thin slices for them to be fully cooked.
